Este encuentro gastronómico promovido y organizado por las autoridades de Pesca, es para mostrar que ha trabajado para que Baja California se consolide en pesca y la acuacultura sustentables, la sanidad y la inocuidad de pescados y mariscos, así como la certificación de plantas para la exportación.
Recientemente se creó el “Sello de Garantía BC” como una forma de corresponder a la vocación pesquera y acuícola de calidad, debido a que se busca alentar la confianza de los consumidores, reducir las importaciones productos marinos y transparentar la trazabilidad de lo que se produce en nuestros mares.
“Cocina la Baja Sefood Festival” es un esfuerzo para reconocer la vocación productiva y gastronómica de la entidad, por lo que este año, dentro de los invitados especiales se contará con cheffs enfocados en pescados y mariscos, así como periodistas especializados en gastronomía, tanto de México como del sur de Estados Unidos.
Como en las ediciones anteriores, los asistentes podrán degustar platillos a base de almeja, langosta, escama, atún, erizo, sardina, pulpo, ostión, mejillón, lobina rayada y otras especies, además de música viva y un escenario junto al mar, el “Estero Beach Resort”, que ha sido la sede de las dos ediciones anteriores.
Actualmente, debido a un programa emprendido por el gobierno del Estado, Baja California cuenta con el mayor número de plantas certificadas de inocuidad sanitaria, para comercializar producto en todo México y diversos países del mundo.
Baja California cuenta con especies de alto valor comercial como el abulón, langosta, pepino de mar, erizo, atún aleta azul y almeja generosa, lo que coloca al Estado como uno de los productores más demandados por el mercado extranjero, principalmente de países asiáticos.
