«La innovación de nuestro producto está en la tecnología que usamos para su elaboración, y en el tipo de fermentaciones», explicó la universitaria.
México ocupa el primer lugar mundial en consumo de refrescos y el sexto en bebidas endulzadas, lo que contribuye a la crisis de obesidad y diabetes que vivimos.
En el laboratorio Gómez Pliego y su equipo caracterizaron por cromatografía de gases-masas, el tipo de compuestos que se forman durante la fermentación; de éstos, cuantificaron los que son hipoglucemiantes y antihipertensivos, «por ello la bebida está dirigida a combatir el síndrome metabólico», explicó.
Los hipoglucemiantes poseen la capacidad de disminuir los niveles de glucosa en sangre y algunos de ellos, como la insulina, se utilizan en el tratamiento de la diabetes. En tanto, los antihipertensivos reducen la presión arterial en sangre y con ese fin se usan como fármacos.
Kombufesc está hecha de una mezcla de hierbas, raíces y plantas; contiene una combinación de árnica, cúrcuma, cardamomo, anís, jamaica y frutos rojos. Se realizan diferentes tipos de fermentaciones que utilizan consorcios microbianos (bacterias lácticas, acéticas o levaduras), microorganismos que transforman ese caldo de fermentación en una bebida refrescante con un valor agregado adicional de 100 millones de unidades formadoras de colonias de bacterias benéficas por cada mililitro.
